Date & Coconut Cookies

Our sports nutritionist Charlene Cassie has created the perfect healthy cookie to go with your cuppa. They are nutritious and have a great dose of carbs too, perfect for a pre-run energy hit or for a healthy snack. 

Date & Coconut Cookies (makes 40):

Nutritional info per cookie: 55 calories, 1.8g fat, 0.9g protein, 8.5g carbs. 

Ingredients:

  • 65g coconut (desiccated or shredded)
  • 360g dates
  • 100g wholemeal flour
  • 1 tsp baking powder
  • 1tsp vanilla essence/extract
  • 2tbsp coconut oil
  • 50ml milk
  • 1 large ripe banana.

    Method:

    Add all ingredients except the milk together into a blender (or thermomix) and mix until dates have broken down into smallish pieces. Add the milk to moisten the dough and mix again until just combined. Bake in a preheated 180C oven for 12-15 minutes (until golden brown).
