Anzac biscuit recipe

Remembering all those affected by the war and in turn spreading peace. 

Here is our favourite Anzac Biscuit recipe and one of the healthiest and tastiest versions - a delicious snack for runners:

Ingredients:

2 cups oats 

1 cup plain flour (choose any flour of your choice i.e. barley, spelt, wholemeal, plain white gluten free etc)

1/3 cup desiccated coconut

1/3 cup flaxseeds

1/2 cup rice syrup (or barley malt for a golden syrup flavour) 

1/3 cup honey

1/2 cup margarine or butter of selective choice  

1 tsp bicarbonate soda 

1 tbsp boiling water 

 

Method: 

Pre-heat oven to 180 degrees C. 

Mix dry ingredients oats, flour, coconut and flaxseeds in a big bowl.  

Put rice syrup, honey and margarine in a saucepan and bring to boil whilst gently stirring with a wooden spoon then remove from heat. 

Mix bicarb soda and boiling water in a cup then add to saucepan where you will see the mixture foam.

Add the saucepan ingredients to the oat ingredients and mix through. 

Line a large tray with baking paper and flatten tbsp size scoops to small cookie size leaving some room between. 

Bake for 8-10mins until slightly browned. Cool bikkies on wire rack and they will harden. 

Cool fully then store in air tight container for crunchy freshness and enjoy with your favourite cuppa. Fabulous for kids parties too. 

Busting guts at Galston Gutbuster

Lesley Mason tells us about her fabulous debut trail half marathon experience at the Galston Gutbuster recently on 3rd April 2016. She has been breaking new ground and pushing herself harder than ever before! She found this technical trail half marathon even harder than the 2 marathons she has completed previously at Sydney's Blackmores marathon and Hobart's Cadbury marathon. We hope this inspires everyone to keep pushing their limits for the sheer exhilaration of it all.
