Lamb satay skewers & teriyaki noodles
/Here is our healthier version of satay which you'll love. This recipe is packed with iron, protein, carbs and heaps of veggies too either with the colourful vegetable skewers or mixed in with the noodles. The kids tend to enjoy the noodles, but if you don't want the noodles or too many carbs then you can have the vege skewers instead. You can use the satay sauce for lamb or chicken skewers or even in stir frys. Happy cooking!
Lamb satay skewers and vegetable skewers with noodle teriyaki vegetable medley:
Ingredients (6-8 serves):
BBQ Lamb satay skewers:
Lamb fillets / shoulder 1kg
8 skewers
Satay marinade:
½ cup light peanut butter
1 cup light coconut milk / cream
½ teaspoon chilli powder
½ teaspoon ground ginger
1 teaspoon turmeric
2 tablespoon lemon juice
1 tablespoon brown sugar (or coconut sugar which has lower GI)
BBQ Noodle teriyaki vegetable medley:
Aluminium tray if cooking on BBQ otherwise cook in a non-stick fry pan or wok.
Hokkien noodles
Large Carrot grated
Large zucchini grated
6 shallots diagonally cut in 2cm lengths
Parsley leaves to garnish
Teriyaki sauce for the noodles:
½ cup soy sauce
2 tablespoon brown sugar
teaspoon ground ginger
2 tablespoon wine vinegar
1 clove garlic minced
2 tablespoon tomato paste
Grilled vegetable skewers with balsamic maple dressing:
Zucchini
Eggplant
Red onion
Small button mushrooms
Cherry tomatoes
Haloumi optional
8 Bamboo skewers pre-soaked
Balsamic maple dressing to baste vegetable skewers for grilling on BBQ:
50mL Balsamic vinegar
50mL maple syrup
50mL vegetable oil
Method:
BBQ Lamb satay skewers:
1) Dice lamb and thread about 5 pieces on each skewer
2) Brush the lamb skewers with half of the satay marinade
3) BBQ skewers on grill for 4-5mins one side then the other
4) Thin the remaining marinade with extra coconut milk, place in a heat proof bowl/ramekin and heat on the BBQ
5) Serve skewers with the heated marinade poured over or as a dipping sauce
